Africa is blessed with different traditional foods and delicacies that reflect its rich cultural heritage. These meals are part of our identity and remind us of our roots. As we embrace modern food trends, we must not forget the delicious traditional meals that have remained part of our homes and communities. Coconut rice is one of those special African delicacies, known for its rich coconut flavour and delicious taste. It is a wonderful meal to prepare and enjoy with family, especially on a beautiful Sunday.
Ingredients Needed: Rice, fresh coconut, fresh pepper, tomatoes, onions, crayfish, vegetable oil, seasoning cubes, salt, fish or chicken (optional). Preparation: First, pick and wash your rice properly and set it aside. Break the fresh coconut, remove the flesh, blend it with water and sieve to extract the coconut milk. Blend your tomatoes and pepper, slice your onions and prepare the other ingredients. Place a cooking pot on the fire, add vegetable oil and sliced onions, then fry slightly. Add your blended tomatoes and pepper and allow them to cook properly. Add crayfish, seasoning cubes and salt, then stir everything together. Pour in the fresh coconut milk and allow it to boil. Add your washed rice, stir properly and cover the pot. Allow the rice to cook until it becomes soft and absorbs the coconut milk. If you are using fish or chicken, add your already cooked protein and allow everything to simmer for a few minutes. Your delicious coconut rice is ready to be served!
